Boulder Scramble 

1 package firm tofu (cubed)
1/2 onion (chopped)
1 package spinach
1 pint mushrooms (chopped)
2 tomatoes
1/2 cup mozzarella
1/2 cup cheddar jack
2 tsp olive oil
chipolte salsa
salt and pepper
basil
oregano

1. heat oil over medium
2. add first 5 ingredients
3. sauté until onions are brown
4. add cheese and seasonings to taste
5. serve and top with salsa

Flan (gluten free, wheat free, sugar free) 

¼ c xylitol
4 eggs
1 ½ c skim milk
½ c vanilla yogurt
1/4 c xylitol
1 t vanilla
dash salt

1) Preheat oven to 325
2) Melt ¼ c xylitol over medium in a heavy saucepan, and then immediately pour into a round baking pan
3) Beat eggs and then mix in remaining xylitol, vanilla, salt, yogurt, and milk
4) Place baking pan in larger baking tray with about ½ inch hot water in it
5) Pour mixture over xylitol in round pan and bake for 45 minutes or until you can stick a knife in it and it comes out clean

German Turkey Stuffed Peppers 

4 green peppers (tops chopped off and cleaned out)
1 package ground turkey
about 7 pickle strips
1 small onion (chopped)
2 tsp minced garlic
2-3 tomatoes (chopped)
1/3-1/2 block of your favorite cheese
parmesan cheese
1/3 cup mustard
olive oil
rosemary
basil
oregano
salt and pepper

1. Preheat oven to 400
2. heat 2 tbsp olive oil in large skillet over medium
3. bake peppers face down on greased baking sheet
4. briefly brown onions and garlic
5. add turkey
6. mix in tomatoes, pickles, favorite cheese, mustard, and seasonings to taste
7. when becoming soft, remove peppers from oven and flip
8. scoop turkey mix into stuffed peppers and top with parmesan cheese
9. bake 15 minutes or until peppers are done

Sugar Free Apple Crisp 

4 c apples
½ c water
¼ c powdered skim milk
¼ c rolled oats (you can also use quinoa flakes to make this gluten free!)
6 T rice flour
2 T almond flour
½ c xylitol

Sugar Free Cranberry Sauce 

1 package of Ocean Spray Cranberries
1 c xylitol
1 ½ tsp fresh ginger, minced water

boil cranberries, ginger, and xylitol

*Xylitol can have a laxative effect when consumed in large quantities, so you may want to blend xylitol and some other non-caloric sweetener

Super Low Sugar Soy Shake (serves 2) 

2 cups sugar free vanilla ice cream
1/2 cup ice
1 cup soy
2 tbsp cocoa

1. Come on now, you know what to do!

Sweet Mustard Bar-B-Q Sauce 

½ c xylitol
½ c spicy mustard
2 t minced garlic
1T Tabasco
1T lemon juice
1T cider vinegar

1) blend together and enjoy over your favorite b-b-qd meat or veggies!

Yogurt Mustard Salad Dressing 

3 tbs spicy mustard
½ c plain yogurt
½ t salt
3 T lemon juice
1 t xylitol
pepper to taste

1) Blend all together well and serve with your favorite salad
