What is the difference between 'wheat free' and 'gluten free'?
If products are 'gluten free' they are also 'wheat free,' but products that are wheat free are not necessarily gluten free. Gluten is found in many grains, such as wheat, barley, rye, bulgar; and kamut, spelt, and oats to a lesser extent. People can be allergic to wheat and/or have a gluten intolerance, but they do not necessarily have to have both. The latest statistics say that 1 in 133 people are gluten intolerant (also referred to as celiac), and 1 in 5 people would feel better if they cut out wheat.

Which of your products are completely gluten free?

Which of your products are dairy free?
All of the products in the Spring Bakehouse brand are lactose free and some are completely dairy free, like all the crispy thumbprint cookies. In the Sweet Deliverance and Celia's line our coconut macaroons are dairy free. Any product on the site that contains dairy is generally in the format of whey protein isolate, which is virtually casin free.

What are your products sweetened with?
Spring Bakehouse Thumbprints are sweetened with Madhava Organic Agave Nectar, which is less likely to spike your blood sugar than many other sweeteners including organic cane juice and honey. There is a touch of natural maple syrup from Vermont in the cookies to add a hint of flavor. While the jam contains sugar, it only contributes to about 1g of sugar in the whole cookie, the rest of the sugar content being from the fruit in the jam and the organic agave. However, in the next few months we will be working with our jam supplier to switch to a natural granular sugar alternative for the jam.
Everything else on this website is sweetened with a combination of xylitol and erythritol, both derived from plant sources. Xylitol and Erythritol both have a very low glycemic index and are almost non-caloric. For more information on xylitol, please visit our sweeteners page.

Do your products contain corn?
Complete Corn Free product list coming soon! Citric Acid is in the Thumbprint Cookies which is derived from corn. Xylitol comes from plant cellulose, which could mean corn husks. Our understanding is that most people with corn allergies can have xylitol, however consult your doctor first.

Soy lecithin is a natural preservative that many baked goods contain. We use it a few of our products to give our products a smoother texture and to keep them fresher over a longer period of time. From reading numerous reports and talking to many food chemists and nutritionists, we believe that lecithin is actually beneficial to your health because it eases digestion and helps your body absorb nutrients. Our understanding is that generally at least 99% of the proteins in soy are processed out of lecithin, therefore most people with soy allergies are not affected by lecithin. However, you should consult your doctor if you have soy allergies or think you do to find out if lecithin is suitable for you.

Where are your products made?
Our facility in Arvada, CO is being developed to incorporate a state of the art gluten free atmosphere, separate from our glutinous works. In addition our gluten free mixing facility in Boulder has been in operation since August of 2006. Our staff is highly trained about the special need of people with celiac disease and food allergies and understands the importance of paying attention to every little detail.
